Goo Goo Cluster, Two Ten Jack and The Green Pheasant Launch “Miso Crunchy” Collaboration

Chefs Jessica Benefield and Trey Burnette Unveil Izakaya-Inspired

Cluster, as Part of 2018 Goo Goo Summer Chef Series



Chefs Jessica Benefied and Trey Burnette, of Nashville Izakaya and ramen restaurant Two Ten Jack and the forthcoming The Green Pheasant, are pleased to announce their Goo Goo Cluster creation, “Miso Crunchy,” in collaboration with the Fourth Annual Goo Goo Summer Chef Series. The imaginative confection, which incorporates fig jam, mochi marshmallow, chocolate crispy bar and miso caramel, covered in milk chocolate, is available for purchase starting September 14, at the Goo Goo Shop inNashville (116 3rd Ave. South) and online at [googoo.com]googoo.com. “Miso Crunchy” will also be available for sale at Two Ten Jack restaurant (1900 Eastland Ave., Nashville) as well as at The Green Pheasant when it opens this fall at 215 1st Ave. South in downtown Nashville. 


The 12-week series, which launched July 6, features a rotating line-up of “who’s who” in the Nashville culinary scene, in collaboration with Goo Goo pastry chef Bethany Halliger. Flavors rotate throughout the series, and a new chef is announced every two weeks while their creation is available for a limited four-week run. As the final launch in the series, Benefield and Burnette’s “Miso Crunchy” will run through October 12.


“We really wanted to choose ingredients that are in season, staples for us, and some we are very excited about bringing more attention to,” says Benefield. “Miso and kokuto are used in our kitchens daily at Two Ten Jack and The Green Pheasant, and mochi is so fun and chewy; it was just begging to be used in a Japanese-American candy collaboration! Figs being in season, as well as providing that gooey, chewy center we love so much, made us particularly excited. We are so thrilled to be a part of creating a candy with such an iconic company from our hometown." 


To culminate the Summer Chef Series, Goo Goo will showcase all of the chefs’ flavors in the Grand Taste Tents at Music City Food + Wine Festival the weekend of September 14-16, 2018: www.musiccityfoodandwinefestival.com.
