Today, the Estela cookbook (Artisan), the debut cookbook from acclaimed chef Ignacio Mattos, is on stands. Written with Gabe Ulla and featuring stunning photography by Marcus Nilsson, the cookbook brings one of New York's most beloved restaurants to life, with simple and vibrant recipes for making every meal elegant and refined. BENEATH THE LAYERS Known for taking ordinary ingredients and transforming them into extraordinary dishes, Ignacio shares over 100 recipes, including Estela essentials like the lamb ribs with chermoula and honey, ricotta dumplings with mushrooms and Pecorino Sardo, and the hide-and-seek favorite, endive salad with walnuts and Ubriaco Rosso. Each dish reveals surprising techniques— drawing from Ignacio’s experiences in South America, Italy, Spain, California and more— to create bold+bright layers of playful flavor combinations.
