SEASONAL BEIGNETS New Orleans-style beignets with almond cheesecake and blueberry compote. Topped with lemon curd, whipped cream and powdered sugar.

Ruby Slipper opened its first restaurant in New Orleans over a decade ago. Now, the group has grown to operate two brands – Ruby Slipper and Ruby Sunshine – and have more than twenty restaurants spanning six states across the South.

With locations in Nashville, Franklin, Chattanooga and Knoxville, Ruby Sunshine serves all-day brunch, seven days a week, using fresh and local ingredients, and prepares food to order from its scratch kitchen and is currently highlighting a specialty Spring Menu available now through May 29. A few menu highlights from this limited time offering include:

· Blue Crab Cake Benedict featuring grilled crab cakes made with lump blue crab, red bell peppers and Creole seasonings served over a bed of spinach, corn maque choux and fried green tomatoes. Topped with two poached eggs and hollandaise.

· Seasonal Beignets with an almond cheesecake and blueberry compote, topped with lemon curd and whipped cream.

The Bennies are a must try! We recommend THE PEACEMAKER where you can mix and match any two of their benedicts! We went with two of Franklin, Tennessee's favorites:

CHICKEN ST. CHARLES* Fried chicken breast served over a buttermilk biscuit, topped with two poached eggs, finished with a pork tasso cream sauce

EGGS COCHON* Slow-cooked, apple-braised pork debris served over a buttermilk biscuit, topped with two poached eggs, finished with hollandaise

Tacos for breakfast? Yes, please! Try the BREAKFAST TACOS! It is three grilled flour tortillas filled with scramble of eggs, pico de gallo, cojita cheese, chipotle sour cream, and avocado, served with a side of breakfast potatoes. Add chorizo for a little extra savory bite.
